Hotpot of Oxtail

  1. Melt butter & oil in a stew pan, add oxtail and brown all sides - remove oxtail and set aside.
  2. To pan juices add onion & garlic and sauté lightly.
  3. Add carrots and cook 3-4 minutes season with salt and pepper. Return meat to pan stir in stock and wine and bouquet garni. Cover tightly and simmer for 3hrs.
  4. Skim off any fat add tomatoes and potatoes cover and simmer a further hour.
  5. Discard bouquet garni. Serve sprinkled with parsley.
