Hotpot of Oxtail

- Melt butter & oil in a stew pan, add oxtail and brown all sides - remove oxtail and set aside.
- To pan juices add onion & garlic and sauté lightly.
- Add carrots and cook 3-4 minutes season with salt and pepper. Return meat to pan stir in stock and wine and bouquet garni. Cover tightly and simmer for 3hrs.
- Skim off any fat add tomatoes and potatoes cover and simmer a further hour.
- Discard bouquet garni. Serve sprinkled with parsley.
