Aioli (eye-yo-lee) the french word for garlic is "ail". Sometimes called the "butter of provence". Ailoi is garlic flavoured mayonnaise made from pounded cloves of garlic, egg yolks, oil and herbs. It can be served as a sauce for a variety of dishes, perfect with hot chips, roasted vegetables and sublime just on bread with your favourite topping.
